Barnea - Barnea was named after the Kadesh Barnea region in which it was found, on the border between the Sinai Desert and Israel. It has a medium to high oil content and is planted extensively throughout Australia. A medium oil style.
Picual - Picual has the widest spread of any single cultivar in Spain. It is the main tree in the Jaen area (Andalucía), the largest olive-growing region in the world. It is a small to medium sized fruit which makes high quality aromatic oil. A strong oil style.
Frantoio - The origin of this cultivar is Tuscany, Italy. It has small to medium sized fruit with high oil content. Well known for its nutty flavour. A strong oil style.
Leccino -The Leccino cultivar originates from central Italy. It is found however, in most olive growing regions in Italy but is also found on a significant scale in some other olive growing countries. It has a small to medium sized fruit with a medium to high oil content. A mild oil style.
Nevadillo Blanco - A medium sized Spanish fruit variety that can be used for oil and pickling. It produces high oil content with similar characters to Picual. A strong oil style.
Manzanillo - A high quality oil and picklilng fruit variety (green and black). It has medium to large fruit size and is of Spanish origin. A medium oil style.
Arbequina - A relatively small fruit with high oil content. The major cultivar of Catalonia in Northeast Spain. A mild oil style.
Koroneiki - Koroneiki is the chief oil variety of Greece. It's small fruit ripens early producing high oil yields. The robust oil is highly rated and has a relatively long shelf life. A strong oil style.
Picholine - Picholine is the major French cultivar. In general it can be considered dual purpose both for pickling (green) and oil extraction. It produces high quality oil with a medium to high yield. A strong oil style.
Coratina - This Italian variety adapts easily to different olive-growing environments and produces high quality, peppery oil. A strong oil style.
Correggiola - A Tuscan Italian variety with small to medium fruit with a good oil content. A mild oil style.
Kalamata - A Greek olive made most famous for its excellent pickled olive. It can be used for oil as well as pickling. The actual cultivar of olive is the Kalamon and the work Kalamata comes from the name of the town that this style of pickled olive originated. A mild oil style.
South Australian Verdale - A medium to large oval shaped fruit that can be used for oil and pickling. Oil yields are medium to low but can be very high quality. Originated from France. A mild oil style.
UC13A6 - A large fruit used for pickling. The green pickled table fruit has excellent texture and flavour. A mild oil style.
